So… This really doesn’t require much of a recipe because it’s so amazingly easy, but it’s worth adding, for sure. It is great way to add a little more vegetables into your diet, you have to try it. Talk about a great substitute for bread… who doesn’t love sweet potatoes?
On that note, a word about sweet potatoes (which I have mentioned before) – I love white sweet potatoes, purple sweet potatoes, and Japanese sweet potatoes much better than your standard orange yam lookalike. If you have access to these (I know, not every grocery store carries them…) but if your’s does, definitely try them out and figure out which your favorite is. Everyone who comes over for dinner when we’re having sweet potatoes comments on how much better those are than your standard.
Here are the loose instructions:
- Scrub the outside of your potato. (Mine are from a local farm, so they are covered in dirt!)
- Cut off the ends of the potato.
- Cut into ¼ inch slices.
- That’s it – pop them in the toaster until they are pretty soft and start to brown around the edges.
It’s likely going to take more than one go – mine generally take two and a half goes through the toaster. I realize this is a bit longer than bread… but it’s totally worth it! Obviously the thinner your slices, the faster it will take, but thicker slices will hold up better when topped with anything substantial
Top with anything! Almond butter, your favorite sandwich meat, avocado (duh!) anything! Enjoy!
