This dish is so easy to make and easily personalized with any type of vegetable or starch. It is a very cozy dish that is a winter staple in our house!
Slow Cooker Chicken with Couscous
Yield 4 servings
This dish is so easy to make, you literally cannot mess it up!
- 4 boneless, skinless chicken breasts
- 1/2 cup onion chopped
- 1 cup celery, chopped
- 1 cup carrots, chopped
- 3 chicken bouillon cubes
- 2 cups water
- 1 1/2 cups couscous
- Combine all of the ingredients, except the couscous in your slow cooker. (Make sure that the chicken is completely covered by the water. If it's not, add more and adjust the bouillon cubes, if needed.)
- Cook on low for 6-8 hours.
- Add the couscous and cook for an additional 10 minutes, until it has soaked up all the liquid.
You can totally add or subtract any of the vegetables in this dish. I have added leeks, butternut squash etc., and it always tastes amazing. You can also use rice or another grain besides couscous, you may just have to adjust the soaking time. You literally cannot mess this up!
